Alligator Eggs

Let me tell you, my husband and I really like pickled eggs!  I have always turned my nose up to the pink ones sitting on the shelf at our local grocers.  Dear likes them!  Ugh… those make me green when I look at them. (Even though I don't eat them.)   

Until last year, I have never tried much less made pickled eggs. Homemade pickled eggs are what my hubby requested as an anniversary gift to him.  I found this recipe for Sriracha Pickled Eggs and made them!  I have been making them by the dozens ever since; we cannot get enough of them!  The only thing that I tweak is that I add some smashed, fresh garlic cloves.  We really like to punch up that GARLIC flavor.  I'm kind of famous in the trailerhood for my sriracha pickled eggs. ;)

Over on the Florassippi Girl's blog,  she has made what is called Alligator Eggs.  Cajun Pickled CHICKEN eggs.  The alligator is just a cute name, since it's Cajun inspired.  ;)  Here is the link to her recipe.  Being from Louisiana, crawfish powder boil is a staple pantry ingredient in my house/trailer.  I followed her recipe minus the red pepper flakes.  I just didn't have any on hand.

I couldn't wait a week to let them marinate.  I ate one within 24 hours of making them!  

THEY ARE SO GOOD!!!! I WILL BE MAKING MORE TODAY!

If you have a pressure cooker, (this is the one I have) hard boil your eggs in it!
  1. Place steamer rack in the pot.
  2. Pour 1 Cup of cold water in the pot.
  3. Place as many eggs as you want on the steamer rack.
  4. Place the lid and lock it.
  5. Make sure the vent is set to SEALED.
  6. Press the MANUAL button
  7. Adjust the pressure to LOW and time to 6 minutes.
  8. When it's done, let the pressure release naturally for 5 min then QR.
PEEL YOUR BEAUTIFUL EGGS LIKE USUAL!
