Simple Tomato and Onion Salad
When we are on the road, you can bet that Dear is going to find a local farmer's market or produce stand.  He loves fresh produce.  Don't get me wrong, I love fresh fruits and veggies, too!  He just goes a little overboard.  Saturday he bought 8 tomatoes, 20 jalapeno peppers, 2 pounds of roasted peanuts, and 2 pints of strawberries.  I just shook my head.  In a travel trailer it's hard enough to store fresh produce, much less try to eat it all before it spoils.  
I had two tomatoes that were very ripe today.  Something HAD to be done with them.  I decided to make tomato and onion salad.  Sometimes I will peel and dice a cucumber to put in this salad.  It's a great addition! 
 Just a few staple pantry ingredients for the dressing and VOILA! You will have a marinated salad!  
 Simple Onion and Tomato Salad
- 2 large tomatoes, diced
 - 1 medium onion, halved and thinly sliced
 - 2 t Apple Cider Vinegar*
 - 2 t white sugar**
 - 2 t olive oil
 - juice from 1/2 a lemon
 - 1/2 t salt
 - 1/4 t black pepper
 
- In a mason jar with a lid, shake the vinegar, lemon juice, sugar, salt, olive oil, and black pepper together. No worries if you don't have a jar, just whisk the dressing in a bowl.
 - Pour dressing over tomatoes and onions. Mix until everything is coated.
 - Refrigerate until ready to serve.
 
*use any vinegar that you have on hand. Dear is on an Apple Cider Vinegar kick.  He's a little behind on the ACV craze. 😆
**you can substitute Splenda, Stevia, or other sweetener instead of sugar.
Don't be afraid to adjust the seasonings to your liking!  
There you have it!
I like to eat it on top of a grilled hamburger patty, with a boiled egg, or add a scoop to a green salad!  
It's a versatile dish.  I hope you enjoy it!
